About Burns Night

Burns Night, on 25 January, marks the birthday of Robert Burns, the national poet of Scotland, born in 1759. Burns Suppers are held in homes, clubs and halls in Scotland and by Scots around the world. The evening has a set order: the guests are welcomed, and a grace, the Selkirk Grace, is said. The haggis, a savoury pudding of sheep's offal, oatmeal, onion and spices, is carried in on a platter, led by a piper, and the host recites Burns's "Address to a Haggis" and cuts it open with a knife with the line "Gie her a haggis". It is served with neeps and tatties, mashed swede and potato, and washed down with whisky. Toasts, songs, and recitals of his poems follow, ending with "Auld Lang Syne".
