Couscous Friday
The North African habit of serving couscous after the Friday prayer.

In Morocco, Algeria and Tunisia, Friday is the day of couscous. After the midday prayer, families gather for a steaming dish of fine semolina grains, steamed over a stew of meat and seven vegetables, served in a large shared dish. The first portion may be given to a neighbour or the poor. The meal is eaten with spoons or the right hand, and the head of the family serves. Couscous is also made for weddings, births and funerals. UNESCO listed the knowledge, skills and practices of couscous as heritage shared by four countries in 2020. It is a sign of the weekly rhythm of family.
