The jebena is a clay coffee pot with a round base, a long neck and a spout, used in the Ethiopian and Eritrean coffee ceremony. Green beans are washed and roasted in a pan over charcoal, the aroma wafted to guests, then ground with a mortar and brewed in the jebena, which is set on a small stove. The coffee is poured from a height into small cups without handles, in three rounds. Incense burns, and a plate of popcorn or bread is served. The ceremony takes about an hour and is the heart of hospitality in the country, the origin of coffee in the world.
