Jollof is a dish of rice cooked in a sauce of tomato, onion, pepper and spices, found across West Africa, with versions in Nigeria, Ghana, Senegal, Gambia and Sierra Leone. It is served at weddings, naming ceremonies and parties, with chicken, plantain or fish. A friendly rivalry over which country makes the best is fought on social media, and the argument is part of the fun. The dish may descend from thieboudienne in Senegal, where it is cooked with fish. Party jollof, cooked on a wood fire, has a smoky taste prized by guests. Jollof is a staple of the African diaspora in Britain and America.
