About Passover
Pesach begins on the 15th of Nisan and recalls the exodus from slavery in Egypt. Before it, homes are carefully cleaned of chametz, leavened foods. On the first night, and in the diaspora also the second, families hold the seder, a ritual meal built around the Haggadah, a book which tells the story. The seder plate holds symbolic foods: matzah, the unleavened bread of haste, maror, bitter herbs for the bitterness of slavery, charoset, a paste of fruit and nuts for the mortar, a roasted bone, an egg and greens. Four cups of wine are drunk, the youngest child asks the Four Questions, and a cup is poured for the prophet Elijah. For the rest of the week, only matzah and food prepared without leavening are eaten.
