Traditions of Chefchaouen

The blue-washed mountain town of the Rif, known for weaving, goat cheese and an Andalusian past.

Chefchaouen is a small town in the Rif mountains whose houses are painted in shades of blue. It was settled by Muslims and Jews fleeing Spain in the fifteenth century, and the local dialect and cooking reflect Andalusian ties. The weekly market draws people from the surrounding hills.

Blue lanes and looms

Weavers in the old town make woollen blankets and the striped cloth of the Jebala region. The town keeps Andalusian traditions of music and festival, and people in the Rif wear straw hats with woollen tassels. Eid and Mawlid are celebrated with processions.

At the table

Chefchaouen is known for fresh goat cheese, served with local honey, and for bissara, a thick soup of dried fava beans, drizzled with olive oil and cumin. The mountain region produces figs, almonds and herbs. Tea is poured with mint and wormwood in the cooler season.
