Traditions of Göreme

A cave-house village in Cappadocia, where rock-cut churches, pottery and pigeon houses mark the landscape.

Göreme is in the middle of Cappadocia, a land of soft volcanic rock that people have carved into churches, houses and storage rooms for more than 1,500 years. Local families still use cave homes and keep pottery traditions with the red clay of the Kızılırmak river. Winemaking and dried fruit are old village trades.

Rock and clay

Potters at Avanos spin the red clay on kick wheels and finish the pots with traditional glaze. Pigeon houses cut into cliffs once provided fertiliser for vineyards. Byzantine monks painted frescoes in the rock churches of the open-air museum. Village weddings include henna nights and drum and zurna music.

At the table

Testi kebabı, meat and vegetables cooked in a sealed clay pot that is broken at the table, is the regional dish. Manti, small dumplings with yoghurt, and gözleme are village foods. Local grapes make wine, and pekmez, grape molasses, is spread on bread.
