Traditions of Marrakech

A red city of souks, storytellers and snake charmers whose great square, Jemaa el-Fnaa, turns into an open air restaurant each night.

Marrakech was founded in the eleventh century and is built largely of red clay. Its central square, Jemaa el-Fnaa, is on UNESCO's list as a place where oral tradition, music and storytelling still happen every evening. The souks beyond it are a labyrinth of crafts, spices and leather.

At dusk, cooks set up smoky food stalls, and musicians, acrobats, storytellers and healers form circles. Gnawa music, with iron castanets and the sintir, a three-string bass lute, comes from a spiritual tradition of West African descendants. The souks are divided by craft, from dyers to coppersmiths.

Tagine, couscous on Fridays, pastilla, a sweet and savoury pigeon pie, and harira soup at Ramadan are classic. Mint tea, poured from height into small glasses, is a ritual of welcome, three glasses for each guest. Orange juice carts line the square, and snail soup sellers work in the night.
