Traditions of Nice

A Mediterranean city with a spectacular Carnival, a flower market and a cuisine of its own, born of Italy and France.

Nice belonged to Savoy and Italy until 1860, and its dialect, Niçard, and cooking are different from the rest of France. The Carnival of Nice, held for two weeks in February, features parades with giant floats and a battle of flowers. The Cours Saleya market has sold flowers and vegetables for generations.

Carnival and flowers

Giant papier-mâché floats parade along the Promenade des Anglais, with a king of carnival burned at the end. In the battle of flowers, performers throw mimosa and gerbera to the crowd. On 21 June, at the Fête de la Musique, musicians play on every street.

At the table

Salade niçoise, with tomatoes, tuna, olives and anchovies, socca, a chickpea flatbread, pissaladière, an onion tart, and ratatouille are the classic dishes. Pan bagnat is a sandwich of the salad. Olive oil from Nice is protected by a label. Rosé from Provence is drunk.
