Traditions of Salta

A northern colonial city where the Miracle feast, Andean folk music and empanadas salteñas define a distinct Argentina.

Salta is the capital of the north-west of Argentina, a region of Andean valleys, with strong Indigenous and colonial roots. Each September, the Feast of the Lord and Virgin of the Miracle, a procession of thousands, brings a pilgrimage to the cathedral. The region is also the home of folk music, peñas and the empanada salteña.

The Miracle and the peña

The Señor y la Virgen del Milagro procession is one of the largest religious events in Argentina, drawing hundreds of thousands. Peñas, music houses, host guitar, charango and bombo players, with the zamba and chacarera dances. In Carnival, people throw flour and water, and the Pachamama is honoured in August with offerings of food and drink buried in the ground.

At the table

Empanadas salteñas, baked with beef, potato, egg, and chilli, are cut by hand. Locro, a stew of corn, beans and meat, is eaten on 25 May. Humitas and tamales are made, and quinoa and corn are staples. Torrontés wine and chicha are drunk.
