Traditions of Bridgetown

The capital of Barbados, with Crop Over, cou-cou and flying fish, and a heritage of rum.

Bridgetown is a harbour city, part of a World Heritage site for its colonial garrison. Barbados is regarded as the birthplace of rum, and its festival Crop Over, originally the end of the sugar cane harvest, runs from June to the first Monday of August, Kadooment Day, with costumes, soca and calypso.

Crop Over

Crop Over was a harvest festival for enslaved people which was revived in 1974. It includes the ceremonial delivery of the last canes, the Cohobblopot show, and the Grand Kadooment parade on the first Monday of August. Tuk, a folk music of flute and drums, with a character called Mother Sally and a Donkey Man, is part of the festivities.

At the table

Cou-cou and flying fish, cornmeal and okra with steamed fish, is the national dish. Pudding and souse, pickled pork with steamed sweet potato, is the Saturday meal. Macaroni pie, fish cakes, and conkies at Independence are enjoyed. Mount Gay rum, from 1703, is sipped.

Signature traditions of Bridgetown

Also part of it, and being written: Cou-cou (The dish.).
