Traditions of Lyon

The gastronomic capital of France, home of the bouchon restaurant and the December Fête des Lumières.

Lyon, at the meeting of the Rhône and the Saône, is known for its silk weaving and for a cooking tradition once led by women, the mères lyonnaises. The traditional restaurant, the bouchon, serves hearty plates in a warm room. Each December, the city is lit with candles and light shows in the Fête des Lumières.

Lights and weavers

In 1852 the people of Lyon lit candles in their windows to thank the Virgin Mary for saving the town from plague, and the practice continues each 8 December. Silk workers, canuts, developed a trade of fine weaving, and a puppet, Guignol, was invented in the city to mock the powerful.

At the table

A bouchon meal might include quenelles, a sausage called rosette, tablier de sapeur, tripe, and a salad of lardons. Pralines, rose-coloured, fill the tart of the city, and cervelle de canut is a herb cheese. Beaujolais wine is poured in small bottles called pots.

Also part of it, and being written: Bouchon lyonnais (The restaurant.), Guignol (The puppet.), Quenelle (The dumpling.).
