Traditions of Budapest

A city of thermal baths and coffeehouses, with the Busójárás carnival and a paprika-red table.

Budapest is the capital of Hungary, formed from Buda and Pest on either side of the Danube. Hungarians treasure folk art, the dance houses, táncház, and the embroidery of Kalocsa and Matyó. The bath culture dates from Roman and Turkish times, and the table is full of paprika.

Dance houses and the Busó

In a táncház, musicians play violin and cimbalom in a circle and everyone learns the steps, a movement recognised by UNESCO. At Mohács, near Budapest, the Busójárás carnival has people in horned masks and sheepskin chasing away winter with noise. At Easter, boys sprinkle girls with water or perfume.

At the table

Goulash, a stew of beef with paprika, and halászlé, fish soup, are national dishes. Lángos, a fried dough with sour cream and cheese, is street food, and dobos torta is a layered cake. Pálinka, a fruit spirit, and Tokaji wine are poured. Chimney cake, kürtőskalács, is a sweet roll.
