Traditions of Cologne

A city on the Rhine famed for a wild Carnival, Kölsch beer and a cathedral that took six centuries to build.

Cologne, or Köln, has a cathedral that dominates the skyline and a Carnival that dominates the early year. The city's Kölsch dialect and its beer, served in thin glasses, are sources of local pride. The Rhenish habit of friendly tolerance, summed up in a saying, Et hätt noch immer jot jejange, shapes its character.

Carnival

Carnival begins on 11 November at 11:11 with the new season, and the main days culminate on Weiberfastnacht, when women cut men's ties, and the Rosenmontag procession, with floats and sweets thrown to the crowd. The Three Stars, a prince, a peasant and a virgin, lead the carnival. The cry of Kölle Alaaf is shouted.

At the table

Kölsch is poured by a server, Köbes, who keeps refilling the glass until the drinker puts a coaster on top. Halve hahn is a rye roll with cheese, and Himmel un Ääd is blood sausage with potatoes and apple. Reibekuchen are potato pancakes. Eau de Cologne has been made here since 1709.
