Traditions of Huế

The former imperial capital, with court music, royal cuisine and a Tet celebrated in old style.

Hue was the capital of the Nguyen emperors from 1802 to 1945, and its citadel and tombs line the Perfume River. The city has a gentle, formal character, with its own court music, nha nhac, and a refined cooking style based on small portions of many dishes. Buddhism is strong here.

Nha nhac, Vietnamese court music, was performed at royal ceremonies and is recognised by UNESCO. In spring the Hue Festival brings back royal ceremonies, and in the Perfume River, boats carry lanterns for the Buddha's birthday. Tet in Hue has long been a more formal affair than elsewhere, with offerings at the family altar.

Bun bo Hue, a spicy beef noodle soup with lemongrass, is the city's most famous dish. Imperial cuisine added banh khoai, little crisp pancakes, banh beo, tiny steamed rice cakes, and rice cooked in lotus leaf. Meals are served in tiny dishes so that every diner can taste many things.
